A. ) Sir looks like you have problem from both ends.

1. The company and 2. UIDAI

Adhar card is a compulsion now days but that should not be a problem for salary payments if the KYC of your bank is complete.
You can send a legal notice to the company.
As for the Adhar you can also file a case against UIDAI by way of a writ petition making both UIDAI and the company as respondents to obtain interim order. By this you shall get your salary paid and also pray for time for completion of the Adhar requirements.
You can also file a case against the company in the labour commissioner office.
Thanks
Shreyash Mohta

A. ) You have a grievance against two persons, 1. - your company, which is not releasing your salary, and 2. - UIDAI, which has not updated your DOB. You can file a writ petition including both the parties as respondents and obtain interim orders, and if possible, even compensation.

Yes, you can challenge before the High Court and get an interim order for releasing your salary and time may granted to you for satisfying Aadhar requirements.

A. ) Dear client honestly don't hesitate to send them legal notice through professional lawyer. they didn't have strong reasons to hold your pay.file complaint before labour commissioner office.

It depends upon amount of outstanding salary, However, legal notice charges are usually 1000/- to 5000/-.
Fee and charges vary as per lawyer/location/case.
