As a single mother, you have the power to decide whether or not the child's father's name should be included in their academic records. If you do not want the father's name to be recorded in the school's records, you may go to the school administrators and make a formal request to that effect. You could be asked to provide some supporting papers, such as the birth certificate of the kid, which might simply name you as the child's parent, as proof of your position as a single mother. You could also be asked to provide any supporting paperwork for your request.

A legal document or statement saying that the father's name will not appear in any official records and that you alone will be responsible for your child's education may also be required by certain schools. You may need to do this in order to enrol your kid in their school.
